HOMEMADE PIZZA

                                          HOMEMADE PIZZA



  Recipe:

  • 1 1/2 cups warm water (105°F-115°F)
  • 1 package (2 1/4 teaspoons) of active dry yeast (check the expiration date on the package)
  • 3 1/2 cups bread flour (can use all-purpose but bread flour will give you a crisper crust)
  • 2 Tbsp olive oil
  • 2 teaspoons salt
  • 1 teaspoon sugar

  • Olive oil
  • Tomato sauce 
  • Mozzarella 
  • Mushrooms, thinly sliced
  • Cheese
  • Chopped fresh basil
  • Meat
  • Onions, thinly sliced
  • Sliced ham

Blueberry Chocolate Cake

Recipe:                                                    

  • 1/2 cup cocoa
  • 3/4 cup boiling water
  • 250g butter, softened
  • 1 cup sugar
  • 1 tsp vanilla sugar
  • eggs
  • 100 g Blueberry Jam
  • 2 1/2 flour 
1.. Stir the cocoa and boiling water together until smooth. Cool thoroughly.
2. Beat the butter, sugar and vanilla essence together until light and fluffy.. Beat in the eggs one at a time, beating well    after each addition. Beat in half a cup of Blueberry Jam.
3. Sift in the self raising flour and pour in the cooled chocolate mixture. Fold together carefully.
4. Spread into the prepared cake..
5. Bake 50 min 
    180oC.

    6 tablespoons unsweetened cocoa powder
    2 teaspoons baking powder
    1 teaspoon vanilla essence
    2/3 cup (160 ml) milk
    2/3 cup (150 g) butter

    • 2 lb live mussels
    • 1 T unsalted butter
    • 3/4 cup white wine
    • 2 chopped scallions or 1 chopped shallot
    • 2 chopped green garlic shoots or 2 cloves chopped garlic

    Preparation:

    Scrub and debeard the mussels. The "beard" is the fibrous hairy thing hanging from one side of the tasty bivalve. Pull it off with a side-to-side motion.
    In case you are wondering, a mussel is alive if it reacts. Its shell should be closed. If it is open, sit the mussel on the kitchen couter for a bit. It may close when you are not looking.
    Heat the butter over medium-high heat in a large, wide-bottomed pot with a lid; I use a Dutch oven. Saute the shallot or green onion until it is soft but not browned. Add the garlic cloves if using -- if you are using green garlic, leave it out for now.
    Add the white wine (I'd suggest a chenin blanc or something crisp, but you can use any decent white), and bring it to a boil. Add the mussels in one layer if possible.
    Cover the pot and let the mussels steam for 3-8 minutes. After three minutes, check the mussels; many should be open. You want them all open, but some will do this faster than others.
    As soon as most of the mussels are open, turn off the heat and toss in the green garlic, if using. Cover for a minute while you prepare bowls and plates.
    Spoon out plenty of mussels and broth, which should be briny enough to not need any more salt. Throw out any mussels that did not open.
    Serve with crusty bread, more white wine -- and an extra bowl for the shells.

              RECIPE:

      Dough Ingredients
    2.5 MC warm water
    1 egg
    2 tbsp oil
    560 g plain flour (could be less or more depending on the humidity and moisture in the flour)

    Filling Ingredients
    500 g meat cubed (beef and pork mixture)
    1 egg
    Salt and pepper to taste
    1 onion
    20 g butter


    Preparation

    1.
    Dough Method
    Place all the ingredients into the TM bowl and mix for 20 seconds on speed 9. knead for 1 minute on Interval speed .Set aside while you make filling
    Filling Method
    Place 3 MC’s of water into TM bowl.
    Place the meat into basket and cook for 30 minutes at  temperature on speed 2-3.
    Drain TM bowl and place meat into TM bowl to mix for few seconds on speed 8.
    Add egg, salt and pepper, onion plus ½ MC of reserved water.
    Mix together for 30 seconds with the aid of spatula, on speed 6.
    Make DUMPLINGS by rolling out dough on floured surface. Cut into rounds using large scone cutter and place a little of the cooled filling onto half of each round. Fold dough over and seal with small pinches to form semi circles.
    To cook DUMPLINGS, place into salted, boiling water for 2-3 minutes. After they have floated to the surface, remove, and serve immediately !!!

                                                 Homemade Sushi..

    Recipe:
    SUSHI RICE:
    Tip some cooked rice into a flat dish.
    Mix 2 dl of sushi vinegar into the warm rice.
    Make slashes across the rice with a wooden spatula, for example cooling the rice at the same time with a fan or saucepan lid.
    This manner of cooling is important because it helps the excess moisture to evaporate.
    MAKI SUSHI:
    Place bamboo mat on a flat surface and put a sheet of nori seaweed on top of it.
    Make a trough in the middle of the rice and put a little wasabi and a strip of filling into it. the filling can be some fish, for instance, a vegetable or some scampi tails.
    When is ready turn the roll rest of the way and put it aside for a few minutes before cutting.
    Wet a knife, cut discs about 1.5 centimeters thick from the roll and arrange these on a plate..
    Done!!!
